Cauliflower Tacos

Cauliflower tacos? That's WEIRD. Nah, just try them--you'll see. Being plant based you quickly find out how incredibly versatile cauliflower is for things like vegan "wings" on game day or cauliflower ceviche, and yes, TACOS.

2 C. cauliflower, cut into small pieces
1 t. red pepper flakes
1-2 t. cumin
2 C. chopped iceberg (or other crunchy) lettuce
1 avocado, sliced
Mala's Savory Lentils
6 soft corn tortillas
jalapeno pepper, sliced thin or chopped (optional)
hot sauce (optional)

Heat oven to 375 degrees. Lightly steam cauliflower, then toss it with red pepper and cumin and spread it on a baking sheet. Bake for 10-15 minutes (until slightly dark).

Warm tortillas (you can just wrap them in a damp cloth or paper towel and heat in the microwave for a few seconds or in the oven for a few minutes.

When tortillas are ready, pile on lentils, cauliflower, lettuce, avocado and pepper and hot sauce if desired.
