Mala's Savory Lentils

These lentils are so jam-packed with nutrition, so easy to make, and so versatile we make a big batch and add them to all kinds of things, like salads, tacos, and pasta.

1 C. dried green lentils
2-3 bay leaves
2-3 whole cloves of garlic, peeled
a few dashes of dried thyme
1 t. veggie or no-chicken bouillon (we use Better Than Bouillon)
a few sprinkles of pepper

Put lentils in a saucepan and add water just to cover. Place on high heat just until the water is boiling. As soon as it boils, turn the heat down to a very low simmer.

Add bay leaves, garlic, thyme, bouillon, and pepper. Stir in.

Keep simmering, adding a small amount more water each time it looks like most of the liquid has been absorbed and stir again. Repeat until lentils are of desired consistency (between 30-40 mins).

Remove bay leaves and garlic cloves and serve! You can also experiment with your own seasonings.
