Breakfast Sweet Potatoes

We use sweet potatoes because of the superior nutritional value, but you can use any potatoes you like.

1 large sweet potato
2 T. vegan butter or coconut oil

Jab holes in sweet potato with a fork in several places, all the way around. Cook potato in the microwave.

In a saucepan, melt butter or oil over medium low. Cut potato into small chunks (leaving skin on) and add to pan. Sauté until lightly browned. Add salt, if desired.

You can serve these as a side or stir them in with your Belly-Friendly Breakfast Greens.
