Tofu Scramble

1 t. coconut oil
1/2 block of extra-firm, sprouted, non-GMO tofu
3/4-1 C. zucchini, sliced
1/2-3/4 C. red pepper, chopped
1/4 C. onion, chopped
favorite seasonings

Melt coconut oil in medium saucepan over medium heat. Add onion and sauté until nearly translucent, about 4-5 minutes. Stir in zucchini and red pepper let cook another 5 minutes. Crumble in tofu and give it all a good stir. Add salt and pepper to taste, along with any other desired seasonings. (We like curry powder, or some paprika and turmeric.)
